I asked one of my friends in the asylum center, Sherifa, to share a delicious – and affordable – recipe with me. I dug into her recipes and chose this easy chicken dish for 4-5 people. Sherifa recommends serving it with steamed broccoli, rice, bread, butter, fruits and milk. But that depends on your budget.
6 boneless, skinless chicken breast (50 kr)
1 grated parmesan, cheese (13 kr)
6 tablespoons pesto (4 kr)
Heat the oven to 250 degrees. Mix the 6 tablespoons of pesto with half the cheese. Rub the pesto mixture onto the chicken breast until it´s all lightly mixed. Put the remaining cheese on a plate and press both sides of the chicken breast into cheese to form a coating. Place the chicken onto a baking dish. Bake for 25 minutes at a temperature of 165 degrees.
